de Villiers supported by David Miller and Roussouw prevented South Africa from further trouble after the early exit of Amla and Quinton de Kock.
The late cameo from Behardien (64 not out off just 31 balls) helped South Africa reach a match-winning score.
Earlier, United Arab Emirates captain Mohammad Tauqir won the toss and sent South Africa in to bat in their World Cup Pool B match at a sunny Wellington Regional Stadium on Thursday.
South Africa brought in Farhaan Behardien for batsman Faf du Plessis, who has a back strain, while Vernon Philander, who has been out with a hamstring injury, replaces fellow paceman Kyle Abbott.
